When it comes to iconic foods in Yokohama, few dishes rival Sanma-men. Step into any local Chinese restaurant in the city, and you’ll almost certainly find it on the menu. What is Sanma-men?
Despite its name, Sanma-men doesn’t include the fish sanma. Written in kanji as [生馬麺], the characters tell the story: [生] (fresh) refers to fresh vegetables, and [馬] (horse) means “placed on top.” Typically, the dish features Chinese cabbage, bean sprouts, and pork, all served with a slightly thick sauce poured over the noodles—similar to sara udon.
The soup base can vary, from soy sauce to salt, but it usually resembles a light soy ramen. Unlike ramen, Sanma-men isn’t overly oily, making it a hearty yet balanced meal.

Where to Enjoy Yokohama’s Famous Noodles
Many local Chinese and ramen restaurants across Yokohama serve Sanma-men, and it remains the city’s signature noodle despite the rising popularity of Iekei-style ramen. The birthplace of Sanma-men is said to be Gyokusentei in Isezakichojyamachi, a restaurant still beloved for its classic recipe. Each restaurant may tweak the ingredients slightly, but the generous portions of fresh vegetables remain a defining feature.


The soup can vary depending on the restaurant, with some serving a rich soy sauce base and others opting for a lighter, salt-based broth. Most often, it resembles a flavorful soy ramen, but with noticeably less oil, giving it a lighter, cleaner taste. The toppings may change from place to place, yet every bowl is generously filled with fresh vegetables, from crisp Chinese cabbage to crunchy bean sprouts, making it both hearty and satisfying.
